Ingredients
2 zucchinis, sliced
2 squash, sliced
1 cup green beans, cut into 2″ pieces, cooked
1 cup corn kernels, cooked
1 cup lima beans, cooked
4 tbsp. extra-virgin olive oil
1 tbsp. white wine vinegar
Chopped chives and dill, for garnish
flaky sea salt, to taste
Instructions
Toss zucchini and squash with 2 tsp. salt. Let stand for 30 minutes. Rinse, drain, and pat very dry.
In a large bowl, toss all vegetables with olive oil and vinegar.
Season with flaky sea salt to taste and garnish with herbs.
