Watermelon with Serrano Salsa Verde

Ingredients

  • ½ bunch parsley
  • 1 tbsp. capers
  • 2 cloves garlic, peeled
  • 1 lemon, juiced
  • ¼ cup extra-virgin olive oil
  • 1 small watermelon, cut into wedges
  • 5 serrano peppers

Instructions

  1. To create salsa verde, combine parsley, capers, garlic, lemon juice and 2 serrano peppers in a food processor.
  2. Slowly add olive oil while you continue to process the ingredients until blended. Season with salt to taste.
  3. On a platter, arrange watermelon and slices of the remaining serrano peppers. Top with the salsa verde.
