Stuffed Poblanos

Ingredients

  • 1 cup cooked chorizo, diced
  • 1 can black beans, drained
  • ½ tsp. ground cumin
  • ½ tsp. chili powder
  • 1 tsp. kosher salt
  • 4 poblano peppers
  • 1 tbsp. canola oil
  • 4 oz shredded Mexican-style cheese
  • 2 tbsp. cilantro, chopped

Instructions

  1. Preheat oven to 350°F.
  2. In a small bowl, combine chorizo, black beans, cumin, chili powder, and salt.
  3. Brush each pepper with oil. Make a vertical slit on each pepper and remove seeds.
  4. Stuff peppers with the chorizo bean mixture. Top each pepper with cheese.
  5. Bake in the oven for 20–25 minutes.
  6. Serve over rice and garnish with cilantro and limes.
