Lemon Basil Pasta with Yellow Squash

Ingredients

  • 4 tbsp. unsalted butter
  • 2 garlic cloves, sliced thin
  • 2 yellow squash, sliced thin
  • 1 lb. fusilli pasta, cooked al dente
  • ¼ cup reserved pasta water
  • ¾ cup grated parmesan
  • 2 lemons, juiced
  • ¼ cup basil leaves, julienned
  • 1–2 tsp. freshly cracked black pepper

Instructions

  1. In a medium-sized pan, melt butter over medium heat.
  2. Add garlic and sauté until soft. Add squash and cook until tender.
  3. Add pasta, pasta water, and ½ cup parmesan; toss well until cheese is melted.
  4. Remove from heat and stir in lemon juice and basil.
  5. Garnish with black pepper and remaining parmesan.
