Zucchini & Yellow Squash Succotash

Ingredients

  • 2 zucchinis, sliced
  • 2 squash, sliced
  • 1 cup green beans, cut into 2″ pieces, cooked
  • 1 cup corn kernels, cooked
  • 1 cup lima beans, cooked
  • 4 tbsp. extra-virgin olive oil
  • 1 tbsp. white wine vinegar
  • Chopped chives and dill, for garnish
  • flaky sea salt, to taste

Instructions

  1. Toss zucchini and squash with 2 tsp. salt. Let stand for 30 minutes. Rinse, drain, and pat very dry.
  2. In a large bowl, toss all vegetables with olive oil and vinegar.
  3. Season with flaky sea salt to taste and garnish with herbs.
