Buffalo Zucchini Boats

Ingredients

  • 1 tbsp. oil
  • 1 lb. ground chicken
  • 1⁄₃ cup buffalo sauce
  • 2 medium zucchinis
  • 1 cup low fat shredded mozzarella
  • 2 tbsp. parsley, chopped

Instructions

  1. Preheat oven to 400°F.
  2. Heat oil in skillet over medium heat. Add chicken and cook through.
  3. Stir in buffalo sauce.
  4. Cut zucchinis in half and scoop out seeds.
  5. Add chicken mixture to zucchinis and sprinkle with cheese.
  6. Cover with foil and bake for 30 minutes. Broil the last 2 minutes to crisp.
  7. Garnish with chopped parsley.
